Merry Christmas! The kids woke up sometime after 7 and I had them help me with Jon's gift for a little while to give him a little more sleep time before we headed upstairs to see what Santa had brought. The kids each got their own trampoline, and Bubba got a basketball hoop (which he loves) and Eve got her unfinished dollhouse. Hey, at least we got the first floor done, alright? We promised Eve we'd finish it together during Jon's Christmas break, and he is currently working on it as I type. We had our traditional Christmas Morning Sticky Buns for breakfast (recipe at bottom of this post) and just opened our gift leisurely. A little too leisurely, I suppose, b/c Jon's parents and brother, Adam, arrived before we were even dressed. Oops! Oh well.
That evening, Eldon and I went to my Grama Sabina's for an authentic tamales dinner, and games with cousins and aunts and uncles. Eve had a fever, so Jon stayed home with her.
It was a really nice Christmas! Hope yours was wonderful as well!
Oh yeah, the recipe! Do this the night BEFORE, then just pop it in the oven while you open your stockings. It's a favorite b/c it's SO easy and yummy!
Christmas Morning Sticky Buns
1/4 c chopped walnuts or pecans (optional)
1 pkg. frozen roll dough (I used the cheap Kroger brand and it worked great)
1 small pkg. instant butterscotch pudding
cinnamon
1/2 cube butter (can use a whole cube if your conscience will let you!)
3/4 c brown sugar
cinnamon
1/2 cube butter (can use a whole cube if your conscience will let you!)
3/4 c brown sugar
Sprinkle nuts and 1/4 of the butterscotch pudding in bottom of well-greased bundt pan. Arrange 17-24 frozen rolls in pan, and sprinkle another 1/4 to 1/2 of the pudding on top. (It will look like nothing in there, but trust me, they'll GROW huge! I like to sprinkle some of the pudding in between all the rolls so there is flavor throughout.) Sprinkle with as much cinnamon as desired. Cover lightly with plastic wrap and let stand overnight, or 6-8 hours, at room temperature. In the morning, melt butter with brown sugar and drizzle over top of raised rolls. Bake at 350 for 30 minutes (cover lightly with tin foil halfway through bake time to prevent over-browning the rolls). Serve hot! Happy Christmas!
